This olive oil is carefully selected by the "master taster and blender." The first oils are produced between the middle of October and the beginning of November using Arbequina, Hojiblanca and
Picual varieties. These oils are stored in 2000L stainless steel vats where they are analyzed and then selected in varying quantities and blended to create a superb olive oil with a limited
Aroma/bouquet: Touches of recently cut grass, tomato, green olive and hints of citrus and dried fruits less notable. Flavour/taste: Smooth with light bitterness almost unnoticeable, peppery finish. Pleasant after taste with a persistant olive flavour and small after notes of spices.
Single estate, limited production Organic Extra Virgin Olive Oil, produced exclusively from Hojiblanca olives from early harvest in “El Vicario” estates. Olive grows between 15 and 25 years,
planted in 7 x 7m with drip irrigation system.
Perfume/bouquet: Intense fruity, wide and
powerful, notes of tomato, apple and banana. Also almonds and mint touches in less intensity. Very complex and well balanced. Perfume/bouquet: Soft entrance with vegetable notes of lettuce and almonds. Good balance between bitterness and spiciness. Piquant flavours are present and appear late on the throat, this will descend on the aftertaste.

Aroma/bouquet: Medium intensity, fresh grass aroma combined with notes of olive leaf and ficus plant. Persistent and harmonic, the green sensations are easier to feel than the fruits which appear in less intensity.
Flavour/taste: Astringent with great character and personality, medium-high bitterness depending on the year, piquant taste also present and a bit less intense. The after taste is reminiscent of leaves, grass and chlorophyll in general.

Aroma/bouquet: Medium/soft fruity, fresh aroma of almonds and other fruits medium ripe, very harmonic and balanced. Flavour/taste: Soft and pleasant on entrance, absence of bitterness. Spiciness and piquant sensation a bit more present. It has a vegetal sensation on the palate, persistent and pleasant after taste.
